Very veggie stirfry

Here is something I love. Using up all the leftover veggies from the week in one yummy meal.

Honestly, I'm not a huge fan of salad. I like spinach salad but it gets old very fast. I think I prefer my veggies warm. Here is my go-to lunch when nothing else sounds good (or Eric takes all the leftovers and there is nothing else in the fridge.)

Sauté some red cabbage and a carrot. I would guess this is 2 C cabbage and 1 big carrot.

If your feeling particularly lazy, don't go get your big pan and just do two batches of sautéing. In the next batch I had 1/2 c chickpeas and 1 c. broccoli.

Then I threw a big handful of spinach on top and let it cook down.
Dump everything into a big bowl and coat with soy sauce, sweet potato hummus and Sriracha.
This is Sriracha. DELICIOUS. In fact the only hot sauce I like.

And then devour. Oh so yummy.

In other news. I haven't written about this on the blog, but I think I have told pretty much everyone who reads this...I start Culinary School March 3rd. All the papers are signed, I got measured for my chef shirt (and hideous black striped pants). I am so excited I can't even tell you. I'm also really nervous. It's going to be a tough 7ish months and I am really looking forward to it. It's so nice to have a path and know where your going. =o) Whoop whoop!!
